I usually plan dinners around seasonal or specialty items my small, local grocery store has carrying that week. Different fish or shellfish, cheese and seasonal vegetables are the items that inspire me most.
Today, I found mini heirloom tomatoes in all different colors and sizes. I had goat cheese and a baguette at home so I decided to try a twist on a classic.
It was delish.
Mini heirloom tomatoes
Three simple ingredients
Toast sliced baguette and sear goat cheese rondelle on both sides.
I used cooking spray rather than olive oil to cut the calories.
Slice and saute tomatoes with the small amount of remaining melted cheese in the pan. Salt.
Melted and fried goat cheese and pan blackened tomatoes.
Assemble the toasts with the cheese and tomatoes.
Drizzle a small amount of olive oil.
EAT.
